What makes each type of tea unique?
Teas are as unique as the location where they are grown.
Tea flavor characteristics are based on several factors; one of which is the region of origin, such as China, Indonesia, Africa, Ceylon and Japan; or by smaller districts like Darjeeling, Sri Lanka, Assam, etc. They are also classified by the size of the processed leaf. Traditional processing results in both larger leafy and smaller broken grades such as flowery pekoe, orange pekoe, BOP fanning etc. Perhaps the most important distinction comes from the manufacturing process that results in three categories of fermented tea: (black), unfermented (green), semifermented (oolong or pouchong).
